Tom is proud to say he's Lancastrian born and bred.
He's also beaming when he says he's not a serious chef, preferring to describe himself as big, fat and funny! He's written 21 cookbooks, is a founder of his own Pie Society and you'll often find him at a local farmers' market sharing his passion for Lancashire produce.
Tom got involved in the food business from an early age as he explains, "My Grandma and my Grandad started off in
the beer and booze industry, then we had pubs in Bolton and my mother used to make food for the customers."

But as a young lad at school, his interest in cookery got him some serious stick from his schoolmates, "Everybody used to call me fairy cakes!" The last laugh was on Tom though, as he ended up in the cookery classes with all the girls whilst the boys ended up doing woodwork.
After leaving school,Tom went to catering college and then headed for the bright lights of London and worked for some rather big names. Although he doesn't like to name drop, he does give Sinatra and David Niven a mention!
Tom says you need to put a lot of work into succeeding in the food world, to which knowledge is the key, "I have
a collection of antique cookery books which I study and study and study!"
But it's the simple pleasures that make Tom the happiest, "To
me, life is about good food, good company, enjoyment and really really enjoying what you can put together."
